Tuna Treat
This recipe can work as a snack or meal. It is really delicious as a tuna bake and great for something different for dinner. This is an ideal way to get your fish in for the week (at least 3 fish meals per week).
You need:
- 1 tuna tin
- 3 egg whites
- ½ cup oatmeal
- ¼ cup plain yogurt
- 2 tsp garlic powder
- 1 teaspoon cumin
- ½ tsp chilli powder
- 1 tsp oil
- 2 cups chopped spinach
- Salt & pepper to taste
Method:
- Sieve the oats and put in a cup of water for 10-20 minutes, drain water before use
- Combine all the ingredients
- Note: add egg whites last.
- Bake on 180 degrees for 20-30 minutes.
- Snack (eat 4-6 small muffins): put the mixture into a small muffin pan
- Meal: put the mixture in a glass dish and divide into quarters and serve with a salad
