Zucchini/Baby Marrow Chips

This is one of my ultimate low/no carb recipes. I always suggest this recipe to all our Weight Control Clinic patients and my PlayFunFitness clients. It is super delicious, quick and easy! You will not miss potato chips at all. The Zucchini/Baby Marrow Chips are ideal as a side to your main dish or as a snack. I make this regularly myself and I never get tired of it. Plus it is super healthy and contains very little calories. You can also play around with different herbs and spices. So, if you are missing chips, give this one a try! You need:Zucchini/Baby Marrow Chips

  • Zucchini (aka baby marrow)
  • Salt
  • Pepper
  • Parmesan (optional)
  • 2 tbsp olive oil

Zucchini chips prepMethod:

  • Cut zucchini into thin slices. You can cut it lengthwise (into thin strips) as well – ideal for Zucchin/Baby Marrow lasagne as well
  • Mix the zucchini rings with the oil in a medium bowl
  • Pack the rings in a baking tray, they shouldn’t touch each other
  • Add spices and parmesan
  • Preheat oven to 180 Bake for 15-20 minutes
